The Brine in My Pickles Has Gone Cloudy
Whether cloudy brine is a problem depends entirely on which kind of pickle you made. In a fermented pickle — a lacto pickle, a crock dill, sauerkraut — cloudy brine is expected and is the lactic acid bacteria doing the work you wanted. In a vinegar pickle that was processed in a canner and sealed, the brine should stay clear, and cloudiness that was not there when you put the jar away is a spoilage finding. Discard it. Québec's guidance is not to taste any food that looks unusual, and HealthLink BC lists food that appears to be spoiled among the things never to eat or even taste. Do not taste the brine to decide. Discard the contents in a waterproof container, put it in the garbage, keep it away from pets, and wash your hands and every surface it touched. When in doubt, throw it out.
It depends entirely on which kind of pickle you made, and the two answers are opposite.
In a ferment, cloudy brine is the point. In a vinegar pickle that was processed and sealed, brine that was clear and has gone cloudy is a spoilage finding — discard it. Sort out which you have before anything else.
First: ferment or vinegar pickle?

A ferment is supposed to cloud. You built a brine specifically so lactic acid bacteria would colonise it, and a cloudy, slightly hazy liquid is what that population looks like. A crock of sauerkraut with perfectly clear brine would be the odd outcome.
A processed vinegar pickle is not supposed to cloud. It was acidified, heated, and sealed under vacuum. Nothing in it should be multiplying. The rest of this page is about that case.
Day-one cloudy vs went-cloudy
This is the distinction that actually decides it, and it is easy to establish.
Cloudy from the day you made it, across the whole batch — that is very likely an ingredient or water question, not spoilage:
- Table salt. Anti-caking agents do not dissolve clear. Pickling salt exists precisely to avoid this.
- Hard water. Dissolved minerals cloud a brine, and much of Canada has hard water.
- Starchy or very fresh produce, which sheds fine particles into the liquid.

Clear when you stored it, cloudy now — that is the finding this page is about. Nothing on the list above develops months later in a sealed jar. Something changed inside, and the only thing that changes inside a sealed jar is biology.
If you cannot remember which, you cannot establish the day-one explanation, and you are back to the conservative answer.
What we are not going to tell you
We cannot tell you whether your jar is safe. This page reports what Canadian authorities say about home-canned food that looks abnormal. It is not a diagnosis of the jar on your counter.
And the checks people reach for do not work here:
- Not taste. Québec is direct: “Do not taste any food that looks unusual, is foaming or smells bad.” Botulinum toxin is tasteless anyway.
- Not smell. The toxin is odourless. HealthLink BC states contaminated food “may look and smell normal.”
- Not the pickles looking fine. The brine clouds first — that is the normal appearance of this failure.
- Not the seal. A vacuum formed. That is all a seal proves.
Québec closes that passage with the sentence this site runs on: “When in doubt, throw it out!”
How to dispose of it
HealthLink BC’s steps:
- Place the contents in a waterproof container.
- Put that container in the garbage.
- Do not feed it to pets or other animals.
- Wash your hands well with warm soapy water.
- Wash every utensil and surface the food, the container, or your hands may have touched.
Do not compost it. If the lid is also bulging, do not open the jar at all — bin it sealed and read the bulging-lid page.
Why a sealed vinegar pickle goes cloudy in storage
Worth knowing, because it points at the batch:
- A seal that failed, letting organisms in. Check for leaking and check every lid.
- Not enough acid — a recipe altered to cut vinegar, or a substitution to a weaker vinegar. The acid is the barrier in a vinegar pickle, and Public Health Ontario’s review puts Clostridium botulinum’s growth above pH 4.6.
- Processing time cut short, or not adjusted for altitude — see altitude adjustments.
- An untested recipe, particularly one padded with low-acid additions.
- Storage too warm. PHO’s upper growth bound is 50 °C; a hot cupboard sits well inside it.
Next time
- Use pickling salt, not table salt.
- Use filtered or distilled water if your water is hard.
- Never reduce the vinegar in a tested recipe, and never swap to a vinegar of unstated acidity. The recipe is written around 5%.
- Label and date every jar, so “was it cloudy on day one?” is answerable.
- Check the jars when you put them away, not nine months later.

If anyone has eaten from this jar and develops double or blurred vision, drooping eyelids, slurred speech, difficulty swallowing, a dry mouth or muscle weakness — call 911 or go to an emergency department immediately. Botulism antitoxin works best given early. Do not wait to see whether it passes.
Altitude adjustment
Process times in a boiling-water canner are written for altitudes up to 305 m. Above that, water boils below 100 °C and the time printed in the recipe is no longer enough. Find your elevation, then add the minutes Bernardin publishes for that band.

On the line between two bands, round up to the higher one. Slightly over-processing is safe; under-processing is not.
Bernardin’s published tables stop at 3,050 m. Higher than that, call Bernardin rather than extending the pattern yourself.

Frequently asked questions
My fermented pickles have cloudy brine. Is that a problem?
No — that is what a working ferment looks like. The cloudiness is lactic acid bacteria, which is the whole mechanism you set up when you put vegetables in a salt brine. Fermented dills, lacto pickles, sauerkraut and kimchi all produce a cloudy brine, and a ferment that stayed perfectly clear would be the surprising outcome. This page is about the other case: a vinegar pickle that was processed in a canner and sealed, where the brine was clear and has since gone cloudy.
Could it just be the salt or my water?
Those are real causes of cloudiness, and they matter for a different question than the one you are asking. Table salt with anti-caking agents, and hard water carrying dissolved minerals, both cloud a brine — but they do it immediately, on canning day, uniformly across every jar in the batch. If your brine was clear when the jars went on the shelf and is cloudy now, neither explains it. Something changed inside the jar during storage, and that is the finding.
Can I taste a little of the brine to check?
No. Québec's guidance is explicit — do not taste any food that looks unusual, is foaming or smells bad — and cloudiness in a jar that should be clear is exactly what looking unusual means. Beyond that, botulinum toxin is tasteless, so tasting could not answer the question even if it were safe. There is nothing to learn from a mouthful and a real cost to it.
The pickles look fine, just the liquid is cloudy. Does that help?
No. The brine is where you would see a change first, because it is the clear medium: bacteria multiplying in the liquid cloud it long before the vegetables themselves look different. Intact-looking pickles in a cloudy brine is the normal appearance of this failure, not a reassuring version of it.
What about the other jars from the batch?
Inspect all of them before opening any. If several jars from the same run are uniformly cloudy and have been since the day you made them, that points at the salt or the water rather than at spoilage — a batch-wide, day-one explanation. If one jar has gone cloudy and its sisters are clear, that is a single-jar failure and it is the jar in front of you that has the problem. Either way, check every seal.
