My Canned Food Fizzed or Foamed When I Opened It

If a jar of home-canned food fizzes, foams or bubbles when you open it, discard it without tasting. Both the Québec government and HealthLink BC name foaming explicitly among the signs that home-canned food should never be eaten or even tasted. Fizzing means gas is being produced, and gas means something is alive and metabolising in a jar where the processing should have left nothing alive. There is one important exception: an active ferment such as sauerkraut, lacto pickles or kombucha is supposed to bubble, because that is carbon dioxide from the fermentation itself. A ferment working in a crock is doing its job. A processed, sealed, shelf-stored canning jar is not fermenting, and fizzing from one is a spoilage finding. Discard it using HealthLink BC's disposal steps. When in doubt, throw it out.

One exception, and it is a big one: an active ferment is meant to bubble. Sauerkraut working in a crock is doing exactly what it should. A processed, sealed canning jar is a different thing entirely — sort out which you have before anything else.

First: is this a canned jar or a ferment?

These look identical and have opposite answers. This is the one place on this page where the verdict can go either way.

The dividing line is whether the jar was processed and sealed. A ferment produces carbon dioxide on purpose; you built it to do that. A canner drives dissolved gas out, which is part of how the vacuum forms as the jar cools — so a sealed, processed jar has no mechanism for making gas afterwards.

Why gas means something is alive

A sealed jar is under vacuum, and vacuum is not a thing that generates pressure. For contents to fizz, foam or push bubbles up through the liquid, something inside has to be actively producing gas.

Living organisms produce gas as they metabolise. That is the whole of it. Yeasts do it, spoilage bacteria do it, and Clostridium botulinum does it.

You cannot tell which from the outside. Public Health Ontario’s home-canning review gives the conditions C. botulinum needs to grow: a pH above 4.6, less than 2% oxygen, a temperature between 4 °C and 50 °C, and a water activity above 0.85. A sealed jar in a pantry supplies three of those four by design — the acidity is the only one doing any work, and a jar that has been spoiling has had its acidity changed by the spoilage.

That is why “it’s probably just yeast” is not an available conclusion. It might be. Nothing you can do at the counter distinguishes the cases.

What we are not going to tell you

We cannot tell you whether your jar is safe. This page reports what Canadian health authorities say about foaming home-canned food as a class. It is not a diagnosis of the jar you have open.

And none of the usual checks resolve it:

  • Not smell. The toxin is odourless. HealthLink BC: contaminated food “may look and smell normal, making it hard to tell if it is poisoned.”
  • Not taste. Québec is direct — “Do not taste any food that looks unusual, is foaming or smells bad.”
  • Not appearance. A contaminated jar routinely looks entirely normal.
  • Not boiling it. Boiling is not a rescue and it is not a test.

Québec closes that same passage with the sentence this site runs on: “When in doubt, throw it out!”

How to dispose of it

HealthLink BC’s steps:

  1. Place the contents in a waterproof container.
  2. Put that container in the garbage.
  3. Do not feed it to pets or other animals.
  4. Wash your hands well with warm soapy water.
  5. Wash every utensil and surface the food, the container, or your hands may have touched.

Do not compost it. Do not pour it down the sink.

If you had already begun pouring or serving when you noticed, wash everything the food reached — the bowl, the spoon, the counter — not only the jar.

Why a processed jar starts fermenting on the shelf

Worth knowing, because it points at the batch:

  • Processing time cut short, or not adjusted for altitude. See altitude adjustments — the increment is published and not optional.
  • A seal that never properly formed, letting organisms in afterwards. A chipped rim or a reused lid are the common causes.
  • An untested recipe — particularly one with added low-acid ingredients such as onions, peppers or garlic that push a water-bath recipe out of the range a water bath can handle.
  • Open-kettle “canning”, where jars are filled hot and left to seal on cooling with no processing. Not a canning method.
  • Storage too warm. Public Health Ontario’s upper growth bound is 50 °C; a hot cupboard is well inside the range.

The rest of the batch

One fizzing jar is a question about the run, not just the jar. Inspect every remaining jar before opening any of it, and try to identify what failed. A chipped rim explains one jar; a shortened processing time explains all of them. If you cannot identify the cause, you have no basis for treating the others differently.

If anyone has eaten from this jar and develops double or blurred vision, drooping eyelids, slurred speech, difficulty swallowing, a dry mouth or muscle weakness — call 911 or go to an emergency department immediately. Botulism antitoxin works best given early. Do not wait to see whether it passes.

Altitude adjustment

Process times in a boiling-water canner are written for altitudes up to 305 m. Above that, water boils below 100 °C and the time printed in the recipe is no longer enough. Find your elevation, then add the minutes Bernardin publishes for that band.

On the line between two bands, round up to the higher one. Slightly over-processing is safe; under-processing is not.

Frequently asked questions

My sauerkraut is bubbling. Is that the same problem?

No, and this is the distinction that matters most on this page. An active ferment is supposed to bubble — that is carbon dioxide produced by the lactic acid bacteria you deliberately encouraged, and it is the sign the ferment is working. Sauerkraut, lacto pickles, kimchi, kombucha and a ginger bug all do this, in a crock or a loosely covered jar, at room temperature, in the first days or weeks. That is a completely different situation from a jar that was processed in a canner, sealed under vacuum, and stored on a shelf. Nothing in a processed canning jar should be producing gas.

Could the fizzing just be carbonation from something I added?

In a processed canning jar, no. Water-bath and pressure processing both drive dissolved gas out — that is part of how the vacuum forms as the jar cools. There is no ingredient in a tested canning recipe that produces gas afterwards in a sealed jar. If it is fizzing, something is generating that gas now.

It fizzed but it smells fine and looks normal. Does that change it?

No. Botulinum toxin is odourless, colourless and tasteless, and HealthLink BC states directly that contaminated food may look and smell normal, which is what makes it hard to tell if it is poisoned. A normal appearance is not evidence of anything. The fizzing is the finding. Québec's instruction on this exact point is not to taste any food that looks unusual, is foaming or smells bad.

Can I boil it to make it safe?

Do not treat boiling as a rescue. Boiling is not something to attempt on a jar you already have reason to distrust, and it is not a test — it will not tell you whether the food was safe. The authorities' answer for a foaming jar is to discard it, not to cook it further. Follow the disposal steps rather than trying to salvage the contents.

What if it fizzed as I broke the seal, but only for a second?

A brief hiss as a vacuum releases is not the same as fizzing. Opening a properly sealed jar often makes a short sucking or popping sound as air rushes in — that is air moving inward. Fizzing, foaming or bubbling is gas moving outward, usually with visible bubbles rising through the contents or foam at the surface. If you genuinely cannot tell which you heard, you do not have a finding you can act on with confidence, and Québec's own guidance for that position is to throw it out.
