My Canning Jar Is Leaking or Seeping in Storage
If a jar of home-canned food is leaking, seeping or weeping under the lid while it sits in storage, do not eat it. HealthLink BC names a leaking container alongside a bulging lid on its list of home-canned foods you should never eat or even taste. A jar that leaks in storage is a jar whose vacuum seal has failed, and a failed seal means the contents have been exposed to air and to whatever was on the outside of the jar for an unknown length of time. Discard the contents following HealthLink BC's disposal steps: seal the jar in a waterproof container, put it in the garbage, do not feed it to pets or other animals, wash your hands with warm soapy water, and wash every surface it touched. This is different from liquid lost during processing, which happens while the jars are still in the canner and does not by itself mean the food is unsafe. When in doubt, throw it out.
Discard the contents. A jar that is leaking, seeping or weeping in storage is on HealthLink BC’s list of home-canned foods you should “never eat, or even taste” — they name a container that is “bulging … or is leaching” alongside food that appears spoiled or foams.
A leak in storage means the vacuum seal has failed. How long ago it failed is exactly what you cannot know, and that is the whole problem. Disposal steps are below.
First: is this a leak, or is it siphoning you never washed off?
These get confused constantly, and they have opposite answers. Sort this out before anything else.

The practical test is whether the residue is old or new. Dried and unchanged since canning day points at siphoning. Wet, fresh, or new since you last looked points at a leak.
If you cannot tell — and if you did not wash the jars before storing them, you often cannot — then you cannot establish that the seal is holding. That is a discard.
Why a failed seal in storage is a discard
The seal is not a lid-retention mechanism. It is the barrier that keeps the inside of the jar separated from everything outside it, and the vacuum behind it is what proves the barrier is intact.
When a jar leaks on the shelf, three things are true at once:
- The barrier is open. Anything that can get out can get in — air, moisture, whatever was on the shelf, whatever was on the jar next to it.
- You do not know for how long. A jar checked in October and leaking in February gives you a four-month window and no way to narrow it.
- It has been at room temperature the whole time. Public Health Ontario’s home-canning review gives Clostridium botulinum’s growth range as 4 °C to 50 °C. A pantry sits inside that range, and so does every other spoilage organism’s.
That combination is why there is no “check it and decide” path here. The information you would need — when the seal went, and what got in — is not recoverable.
What we are not going to tell you
We cannot tell you whether your jar is safe. This page reports what Canadian health authorities say about leaking containers as a class. It is not a diagnosis of the one in your cupboard.
And the checks people reach for do not work:
- Not smell. Botulinum toxin is odourless. HealthLink BC states that contaminated food “may look and smell normal, making it hard to tell if it is poisoned.”
- Not taste. It is tasteless, and their instruction is never to eat or even taste food in this condition.
- Not the seal button. A jar that is actively leaking has already answered the question the button is meant to answer.
- Not “it’s only a little”. The volume that escaped tells you nothing about how long the barrier has been open.
How to dispose of it
HealthLink BC’s steps:
- Place the jar and its contents in a waterproof container.
- Put that container in the garbage.
- Do not feed it to pets or other animals.
- Wash your hands well with warm soapy water.
- Wash every utensil and surface the food, the container, or your hands may have touched.
That last step carries more weight here than on most pages. A leaking jar has been putting its contents onto a shelf, and possibly onto the jars beside it, for an unknown length of time. Wash the shelf. Wash the outside of the neighbouring jars. That is not fussiness — the leak has made the storage area part of the problem.
If the jar is also bulging, do not open it at all: put it in the bin sealed and read the bulging-lid page.
Why a seal fails months after it formed
Worth knowing, because it points at what to change:
- A reused SNAP lid. The sealing compound is shaped by its first use. Lids are single-use; HealthLink BC says the same — “Do not re-use the lids.”
- A chip or a nick on the jar rim. Too small to see, big enough to break the seal. Run a fingertip around every rim before filling.
- Bands left on in storage. A band can hold a failed lid in place and hide the failure until something seeps past it. Remove bands before storing so a failure shows itself immediately.
- Rings of residue left unwashed. Food under the lid edge degrades the seal and hides a later leak.
- Temperature swings. A garage or an unheated basement expands and contracts the contents repeatedly. Store cool, dark, dry and stable.
- Being stacked or knocked. Weight on a lid is force against the seal.
Next time
- Wash the jars before they go into storage, so any residue you see later is new information.
- Take the bands off. A jar that fails then fails visibly.
- Label and date every jar — HealthLink BC asks for this — so a problem can be traced to a batch.
- Look at the shelf, not just the jar, when you do a stock check. A ring on the shelf is often the first sign.

If anyone has eaten from this jar and develops double or blurred vision, drooping eyelids, slurred speech, difficulty swallowing, a dry mouth or muscle weakness — call 911 or go to an emergency department immediately. Botulism antitoxin works best given early. Do not wait to see whether it passes.
Altitude adjustment
Process times in a boiling-water canner are written for altitudes up to 305 m. Above that, water boils below 100 °C and the time printed in the recipe is no longer enough. Find your elevation, then add the minutes Bernardin publishes for that band.

On the line between two bands, round up to the higher one. Slightly over-processing is safe; under-processing is not.
Bernardin’s published tables stop at 3,050 m. Higher than that, call Bernardin rather than extending the pattern yourself.

Frequently asked questions
How is this different from liquid loss during processing?
Timing, and it changes the answer completely. Liquid lost during processing — siphoning — happens in the canner, from the pressure and temperature swing, and it leaves the jar with less liquid than it started with and sometimes a sticky ring on the outside. A jar that siphoned but then sealed properly is not automatically unsafe. A jar that is leaking in storage, weeks or months later, is doing something different: contents are escaping past a seal that is no longer holding. That is a failed seal, and a failed seal is a discard.
Is a sticky ring on the outside of the jar the same thing?
Not necessarily, and it is worth telling them apart. A dried, sticky residue that has been there since the day you canned is very likely siphoning from the canner, and it should be washed off before storage precisely so it cannot be confused with a fresh leak later. Wet residue, a fresh drip, or a sticky ring that was not there last time you looked is a leak happening now. If you cannot tell which you are looking at, you cannot tell whether the seal is holding, and the jar goes.
The seal button is still down. Can I trust that?
No. A jar that is actively leaking is telling you the seal is not holding, whatever the button looks like at the moment you press it. The button is one indicator and the leak is another, and they disagree. On a safety question, the finding that says something is wrong is the one that decides. Do not eat from a jar that is leaking, regardless of what the lid appears to be doing.
Can I just reprocess it or move it to the fridge?
Neither, once the jar has been sitting in storage. Reprocessing has a 24-hour window from the original processing, and a jar that has been in a cupboard for weeks is far outside it. Refrigerating is the answer for a jar that failed to seal on canning day and was caught within 24 hours — not for one that has been at room temperature with a compromised seal for an unknown period. What if a jar leaked because something knocked it over?
A knocked-over jar that stayed sealed and lost nothing is a different situation from one that leaked. If a jar is dripping, the contents got out, and if the contents can get out then air, moisture and whatever was on the shelf can get in. We are not going to tell you your jar is fine because you have an innocent explanation for it. No Canadian authority publishes a way to tell a harmless leak from a dangerous one, and the cost of guessing wrong is not a spoiled jar.
