Four weeks out — before the fruit lands

The jobs that are cheap now and expensive in the middle of a 20 lb box of tomatoes. Do these while nothing is ripening.

Once, forever — find your altitude band

Water boils below 100 °C above sea level, so a recipe time that is correct in Halifax is short in Calgary. Most Canadian preserving sites copy American tables and skip this. Look yours up once and write it on the inside of the cupboard door.

The week before — kitchen and pantry

Everything here is a five-minute job that stops a batch dead if you skip it.

Before every single batch

Six things, every time, no matter how many seasons you have been doing this. These are the ones where the failure mode is not a wasted afternoon.

By month — what Canada actually has

Roughly southern Ontario, Quebec and the Lower Mainland. The Prairies and Atlantic Canada run a week or two behind; the Okanagan runs ahead on stone fruit.

After the season — labelling and storage

The half everyone skips, and the reason people end up throwing out perfectly good jars because they cannot remember what year they are from.

If you only do three things

  1. Buy new lids. Jars and bands are reusable; snap lids are not.
  2. Look up your altitude band once. It changes the time or the pressure on every batch you will ever do — find your city.
  3. Use a tested recipe and leave the acid alone. Sugar and salt are yours to move. The vinegar, the lemon juice and the jar size are the process — here is why.
