You need less gear than the kits suggest. Water-bath canning starts with a tall pot, a rack, and a jar lifter; everything else is convenience. Pressure canning is the one place you can't economize — only a true pressure canner reaches the temperature that makes low-acid food safe, and a stovetop pressure cooker is not the same tool.

These buying guides compare the models Canadians can actually get on Amazon.ca and at Canadian Tire, in Bernardin's metric jar sizes (125 mL, 250 mL, 500 mL, 1 L) rather than US half-pints and quarts. We only point at gear we'd buy ourselves, and we say plainly when the cheaper option is the right one.
