The Food Is Floating in My Jar

Whether floating food is a problem depends on when it started floating. Fruit that floated from the day it was canned is a packing and density issue, not a safety one: raw-packed fruit holds air in its tissue and rises in the syrup, which is why tested recipes call for hot packing and snug packing. Food that was sitting normally when you put the jar away and has risen since is a different finding, because something has had to lift it, and in a sealed jar that usually means gas. Gas means something is alive in a jar where the processing should have left nothing alive. Check the seal, look for a bulging lid, and run the rest of HealthLink BC's never-eat list. When it started floating is the whole question.

Floated from day one? That is packing and density — a quality issue, not a safety one. Risen since you stored it? Something had to lift it, and in a sealed jar that usually means gas. Discard.

If you cannot tell which, you cannot establish the day-one explanation, and the conservative answer applies.

Why day-one floating is ordinary

Fruit float is one of the most common cosmetic complaints in home canning and it has a dull mechanical explanation.

Raw fruit holds air in its tissue. Packed cold into hot syrup, that air stays trapped, the fruit is less dense than the liquid around it, and it rises — often within hours of the jars cooling. Loose packing makes it worse, because nothing is holding the pieces in place.

That is exactly why tested Canadian recipes specify hot packing: heating the fruit in the syrup first drives the air out and gets the densities closer together. Our canned peaches guide says the same in its own troubleshooting — hot pack, pack snugly, slight floating is normal.

Same story for lighter-than-brine vegetables and for anything siphoned so the liquid level dropped, which puts food above the line for a different reason — see food darkened at the top of the jar.

Why rising during storage is not

A sealed jar is a closed system under vacuum. Nothing is being stirred, nothing is being heated, and buoyancy does not change on its own.

So if food that sat on the bottom in September is riding high in February, something lifted it — and the ordinary way that happens is gas bubbles forming in or beneath it.

Gas is produced by living organisms. Public Health Ontario’s home-canning review gives the conditions Clostridium botulinum needs to grow: a pH above 4.6, less than 2% oxygen, a temperature between 4 °C and 50 °C, and a water activity above 0.85. A sealed jar in a pantry supplies three of those four by design; the acidity is the only one doing any work.

You cannot tell from the outside which organism is responsible. That is why this gets the same answer as foaming — and why the two so often show up together, along with a bulging lid.

What we are not going to tell you

We cannot tell you whether your jar is safe. This page reports what Canadian authorities say about inspecting home-canned food. It is not a diagnosis of the jar in front of you.

And none of the usual shortcuts settles it:

  • Not appearance. HealthLink BC: contaminated food “may look and smell normal, making it hard to tell if it is poisoned.”
  • Not smell. The toxin is odourless.
  • Not taste. Québec: “Do not taste any food that looks unusual, is foaming or smells bad.”
  • Not pushing it back down. Rearranging the contents does not undo what moved them.

Québec ends that passage with the rule this site runs on: “When in doubt, throw it out!”

If you are discarding

HealthLink BC’s steps:

  1. Place the contents in a waterproof container.
  2. Put that container in the garbage.
  3. Do not feed it to pets or other animals.
  4. Wash your hands well with warm soapy water.
  5. Wash every utensil and surface the food, the container, or your hands may have touched.

Next time

  • Hot pack fruit where the recipe says to. It is the direct fix for float.
  • Pack snugly, without crushing — loose pieces have room to rise.
  • Remove trapped air bubbles before the lid goes on.
  • Follow the recipe’s headspace exactly.
  • Photograph or note the fill level when jars go on the shelf. It costs nothing and it is what makes “has this changed?” answerable in February.
  • Label and date every jar — HealthLink BC asks for this directly.

If anyone has eaten from this jar and develops double or blurred vision, drooping eyelids, slurred speech, difficulty swallowing, a dry mouth or muscle weakness — call 911 or go to an emergency department immediately. Botulism antitoxin works best given early. Do not wait to see whether it passes.

Altitude adjustment

Process times in a boiling-water canner are written for altitudes up to 305 m. Above that, water boils below 100 °C and the time printed in the recipe is no longer enough. Find your elevation, then add the minutes Bernardin publishes for that band.

On the line between two bands, round up to the higher one. Slightly over-processing is safe; under-processing is not.

Frequently asked questions

My peaches floated to the top the day I canned them. Is that a problem?

That is fruit float, and it is a packing question rather than a safety one. Raw-packed fruit holds air in its tissue and is less dense than the syrup around it, so it rises. How do I know whether it floated from the start or rose later?

Compare it with its sisters from the same batch, and with what you remember packing. If every jar from the run looks the same, that is a batch-wide packing explanation. If one jar looks different from the others, or the food is higher than it was when you put it away, that is a change during storage. If you did not look closely when you stored them, you may not be able to tell — and not being able to tell is itself the conservative answer.

Why would food rise during storage?

Something has to lift it, and in a sealed jar the usual answer is gas: bubbles forming in or under the food make it buoyant. Gas is produced by living organisms, and nothing in a correctly processed, correctly sealed jar should be alive. That is why food that has risen since storage is treated as a spoilage finding rather than a packing one, and why it often arrives alongside a bulging lid or foaming on opening.

The food is floating but everything else looks normal. Does that help?

No. Botulinum toxin is odourless, colourless and tasteless, and HealthLink BC states plainly that contaminated food may look and smell normal — so a normal appearance is not evidence of anything. Floating that started during storage is the finding. Run the rest of the never-eat checks, and do not taste the food to decide.

Can I just push it back down or shake the jar?

Rearranging the contents does not change what caused them to move, and shaking a jar you already have questions about is not a diagnostic step. If the food floated from day one, it is a cosmetic issue and there is nothing to fix in a sealed jar. If it rose during storage, moving it around does not undo the gas that lifted it.
