A Jar That Was Sealed Has Come Unsealed in Storage
If a jar sealed properly and has come unsealed later in storage, discard the contents. This is a different situation from a jar that never sealed on canning day, and it has a different answer. A jar that failed to seal within 24 hours of processing can be refrigerated or reprocessed with a fresh lid, because you know exactly how long it has been unsealed and it has been at room temperature only briefly. A seal that released weeks or months into storage gives you neither of those things: you do not know when it went, and the contents have been at pantry temperature without a barrier for an unknown period. Public Health Ontario gives Clostridium botulinum's growth range as 4 to 50 degrees Celsius, and a pantry sits inside it. Do not reprocess, do not refrigerate and keep, and do not taste it. Discard the contents following HealthLink BC's disposal steps. When in doubt, throw it out.
Discard the contents. A seal that held and then released is not the same problem as a jar that never sealed, and it does not get the same answer.
The 24-hour window closed months ago. Reprocessing and refrigerating both depend on knowing how long the food has been unsealed — and that is exactly what you do not know here.
This is not the didn’t-seal question
These two get confused constantly, and the confusion is dangerous because one of them has three good endings and the other has one.

Why the window is the whole thing. Reprocessing on canning day is safe because the food’s entire unsealed history is accounted for. A jar that released in storage has an unsealed history of unknown length, spent at a temperature inside Clostridium botulinum’s growth range — Public Health Ontario gives that range as 4 °C to 50 °C, and a pantry sits squarely in it.
Sealing a jar again does not undo what happened while it was open. It just puts a lid on it.
Establishing which one you have
The honest answer often turns on whether you checked the seals when the jars went away.
- You checked them at 24 hours and they were good → this is a release. Discard.
- You never checked → you cannot tell the two apart. HealthLink BC names “You are not sure if the food was properly canned or not” on its never-eat list — see the unlabelled-jar page, which is the same reasoning.
- Band still on, lid held in place by it → the band can hide a failure for months. This is why bands come off before storing.
How to test a seal properly, since eyeballing it is what lets a failure go unnoticed:
- Press the centre. Firmly concave and rigid, no movement — holding. Flexes, clicks, or springs back — failed.
- Take the band off and lift the jar by the lid alone. A good seal carries the jar’s weight.
- Tap it with a metal spoon. A sealed jar rings; an unsealed one thuds.
Why a good seal lets go months later
Worth working out, because it decides what to do about the rest of the batch:
- A reused SNAP lid. The sealing compound is shaped by its first use and will not reliably hold a second. Lids are single-use, and HealthLink BC says the same.
- A chip or nick on the rim, too small to see. Run a fingertip round every rim before filling — see cracked jars.
- Residue on the rim at the moment the lid went on.
- Bands left on in storage, which hold a failed lid in place so nothing shows until something seeps.
- Temperature swings. Repeated expansion and contraction works a seal loose — see jars that froze.
- Being knocked, stacked or moved. Weight on a lid is force against the seal.
- Rust on the lid, which means moisture has been sitting on the sealing surface.
What we are not going to tell you
We cannot tell you whether your jar is safe. This page reports what Canadian authorities say about unsealed home-canned food. It is not a diagnosis of the jar you are holding.
And the reasoning people reach for does not get there:
- Not “it only just popped”. You noticed it just now. That is not the same as it happening just now.
- Not smell. Botulinum toxin is odourless. HealthLink BC: contaminated food “may look and smell normal.”
- Not taste. Québec: “Do not taste any food that looks unusual, is foaming or smells bad.”
- Not reprocessing. It seals the jar, not the question.
Québec closes that passage with the rule this site runs on: “When in doubt, throw it out!”
How to dispose of it
HealthLink BC’s steps:
- Place the contents in a waterproof container.
- Put that container in the garbage.
- Do not feed it to pets or other animals.
- Wash your hands well with warm soapy water.
- Wash every utensil and surface the food, the container, or your hands may have touched.
If the lid is bulging, do not open it at all — bin it sealed and read the bulging-lid page.
Keep the jar. Wash it and check the rim with a fingertip. The lid is single-use and finished.
Check the rest of the batch
One released seal is a question about the whole run.
- Test every remaining jar by pressing and by lifting, not by looking.
- Work out what failed. A chipped rim explains one jar; a reused lid or a short processing time explains all of them.
- If you cannot work it out, you have no basis for trusting the others differently.
Next time
- Check every seal at 24 hours, before the jars go on the shelf. This is what gives you a known starting point.
- Take the bands off for storage, so a failure shows itself immediately.
- Fresh lids every time.
- Fingertip every rim before filling.
- Store cool, dark, dry and stable — HealthLink BC’s wording is a cool, dry place.
- Label and date every jar.

If anyone has eaten from this jar and develops double or blurred vision, drooping eyelids, slurred speech, difficulty swallowing, a dry mouth or muscle weakness — call 911 or go to an emergency department immediately. Botulism antitoxin works best given early. Do not wait to see whether it passes.
Altitude adjustment
Process times in a boiling-water canner are written for altitudes up to 305 m. Above that, water boils below 100 °C and the time printed in the recipe is no longer enough. Find your elevation, then add the minutes Bernardin publishes for that band.

On the line between two bands, round up to the higher one. Slightly over-processing is safe; under-processing is not.

Why can't I just reprocess it, like a jar that didn't seal?
Because the 24-hour window is not arbitrary. Reprocessing works on canning day because you know precisely how long the food has been unsealed, and it has spent that time cooling rather than sitting at room temperature. A jar that released its seal in storage gives you neither fact: the seal could have gone last week or in October, and the contents have been at pantry temperature without a barrier for however long that was. Reprocessing would seal a jar whose contents you can no longer make any claim about.
Can I put it in the fridge and use it up quickly?
No, and this is the difference that catches people out. Refrigerating is the right answer for a jar caught within 24 hours of processing, where you can account for the whole period. It is not a rescue for a jar that has been unsealed for an unknown stretch at room temperature. Chilling it now stops the clock but does not undo whatever happened before you noticed.
How do I tell a seal that popped from one that never formed?
By when you last knew it was good. Check the seals when jars go on the shelf and you have a fixed starting point — anything after that is a release. If you never checked, you cannot distinguish the two, and a jar you cannot account for is one HealthLink BC lists explicitly among the things never to eat or even taste, under not being sure the food was properly canned.
The lid still looks down but it flexes when I press it. Which is that?
That is an unsealed jar. A holding seal is firmly concave and rigid and does not move at all under a fingertip; a lid that flexes, clicks or springs back has no vacuum behind it, whatever it looks like from across the room. Take the band off and lift the jar by the lid alone — a good seal carries the jar's weight, and a failed one lets go.
What about the other jars from the same batch?
Check every one of them, and check them properly rather than by eye. A single failed seal can be a chipped rim on one jar. Several from the same run point at something batch-wide — a reused lid, residue on the rims, wrong headspace, or a processing time cut short. If you cannot work out which, you have no basis for treating the rest differently from the one that failed.
