There's Rust on My Canning Lid or Band
Rust on a canning band and rust on the lid are two different problems. The band is not part of the seal — it holds the lid down during processing and does nothing afterwards — so a rusty band is a band to replace, not a reason to discard food. Rust on the lid is different, because the lid is the seal. Rust there means moisture has been sitting on the sealing surface, and it raises two questions: whether the seal is still holding now, and why there was moisture in the first place. Check whether the lid is still firmly concave and rigid, whether there is any residue or leak around the rim, and whether the jar shows any other sign on HealthLink BC's never-eat list. If the seal has failed, discard the contents. If rust flakes come off the underside of the lid into the food, discard. And treat rust as a message about where you are storing jars: it means the spot is damp. When in doubt, throw it out.
The band and the lid are two different questions, and only one of them is about your food.

Why the band genuinely doesn’t matter to the seal: the vacuum forms as the jar cools and contracts, and from that moment the lid is held down by the pressure difference, not by the ring. If the rust is on the lid, check the seal
Rust does not tell you the food is bad. The seal tells you whether the barrier is intact.
- Press the centre of the lid. Firmly concave and rigid, no flex — the vacuum is holding. Flexes, sits flat, or has lifted — it has failed.
- Lift the jar by the lid alone, band removed. A good seal holds the jar’s weight.
- Look at the rim for residue, a drip, or a ring on the shelf. That is a storage leak, and a leak is a discard.
- Look at the underside if you open it. Rust flaking from the lid into the food is a discard on its own.

What the rust is actually telling you
This is the part worth acting on, because rust is a symptom of the storage conditions rather than of the food.
Rust needs moisture. Its presence means water has been reaching the metal. The usual causes, roughly in order of how often they turn out to be it:
- Bands left on in storage. A ring traps a film of damp against the lid and holds it there for months. This is the commonest cause and the easiest to fix.
- Jars put away before they were fully dry, especially straight out of the canner.
- Residue never washed off. Siphoned syrup or brine holds moisture against the metal — and it also hides a later leak, which is the real reason to wash jars before storing.
- A damp storage spot. An unheated basement, an exterior wall, a concrete floor, a garage.
- A slow leak from the jar itself. Rule this one out first: it is the only cause on the list that is a food-safety finding rather than a housekeeping one.

What we are not going to tell you
We cannot tell you whether your jar is safe. This page reports what Canadian authorities say about inspecting home-canned food, and what rust indicates mechanically. It is not a diagnosis of what is on your shelf.
And rust is not a test in either direction:
- Rust is not proof the food is spoiled. It is proof of moisture.
- A clean lid is not proof the food is fine. The seal and the never-eat list decide that.
- Not smell. Botulinum toxin is odourless. HealthLink BC states contaminated food “may look and smell normal.”
- Not taste. Québec: “Do not taste any food that looks unusual, is foaming or smells bad.”
Québec closes that passage with the rule this site runs on: “When in doubt, throw it out!”
If you are discarding
HealthLink BC’s steps:
- Place the contents in a waterproof container.
- Put that container in the garbage.
- Do not feed it to pets or other animals.
- Wash your hands well with warm soapy water.
- Wash every utensil and surface the food, the container, or your hands may have touched.
The jar survives. Wash it, then run a fingertip round the rim — a chip you cannot see is a common reason a seal fails. The lid does not: SNAP lids are single-use, and a rusted one doubly so.

If anyone has eaten from this jar and develops double or blurred vision, drooping eyelids, slurred speech, difficulty swallowing, a dry mouth or muscle weakness — call 911 or go to an emergency department immediately. Botulism antitoxin works best given early. Do not wait to see whether it passes.
Altitude adjustment
Process times in a boiling-water canner are written for altitudes up to 305 m. Above that, water boils below 100 °C and the time printed in the recipe is no longer enough. Find your elevation, then add the minutes Bernardin publishes for that band.

On the line between two bands, round up to the higher one. Slightly over-processing is safe; under-processing is not.

Is a rusty band a reason to throw out the food?
No, not on its own. The band's only job is to hold the lid in place while the jar is processed and cools. What it does tell you is that the storage spot has been damp, so check the jar itself and check where you are keeping them.
What about rust on the lid?
That is the one that matters, because the lid is the seal. Rust on the top of the lid means moisture has been sitting there. Rust on the underside, in contact with the food, is a discard. Either way the question becomes whether the seal is still holding: press the centre, look for residue or a leak at the rim, and run the rest of the never-eat checks. A rusted lid is also finished as a lid — it was single-use to begin with.
Can I wipe the rust off and keep the jar?
You can wipe a band and decide whether it is still usable. You cannot wipe a lid back into service — SNAP lids are single-use regardless of condition, and a rusted one is not going back on anything. As for the jar's contents, wiping the outside changes nothing about what happened inside; judge the food by the seal and by the never-eat list, not by how the metal looks once cleaned up.
Why is there rust at all? The jars were dry when I put them away.
