Can You Water-Bath Can Vegetables? (Green Beans, Corn, Carrots)
No. Plain vegetables — green beans, corn, carrots, potatoes, peas, beets, squash — are low-acid foods, with a pH above 4.6, and cannot be safely water-bath canned. Water-bath canning reaches only 100 °C, which cannot destroy Clostridium botulinum spores. In a sealed low-acid jar those spores can grow and produce a lethal toxin. The only safe home method for plain vegetables is pressure canning, which reaches about 116 °C. The alternative is freezing after blanching. The single exception is pickled or acidified vegetables — dilly beans, pickled beets — made with a tested vinegar recipe, which become high-acid and can be water-bath canned.
You’ve got a garden row of green beans or a dozen cobs of corn, a canner full of boiling water, and a memory of doing exactly this with jam last week. So can you just process the jars of vegetables the same way?
No. Plain vegetables cannot be safely water-bath canned — ever.
This isn’t caution for its own sake. Bernardin, Health Canada, and Public Health Ontario all draw the same hard line, and it comes down to one number and one bacterium.
The pH 4.6 rule
Every food sits somewhere on the acidity scale, and pH 4.6 is the line that decides which canning method is safe.

Plain vegetables are low-acid — they sit above pH 4.6. That single fact rules out water-bath canning, no matter how long you boil the jars.
Why boiling water isn’t enough
The danger in a sealed low-acid jar is Clostridium botulinum. The BC Centre for Disease Control puts its spores “in the natural environment, such as soil and water sediments as well as on foods, including meat, fish, and raw fruits and vegetables” — and names the only two situations in which they cause illness: “when these spores grow in immature intestines of babies, or in conditions with no oxygen, such as home-canned foods and honey.” Eating them in fresh or frozen food is neither, which is why raw vegetables are not a botulism risk and a sealed jar of them is. (The infant half of that sentence is why honey is never given to a child under one.) The spores are also remarkably heat-resistant.
- Water-bath canning reaches 100 °C (the boiling point of water). That’s hot enough to kill the bacteria, yeasts, and moulds that spoil high-acid foods — but it cannot destroy botulinum spores.
- In a high-acid jar (below pH 4.6) that doesn’t matter: the acid itself prevents the spores from growing, so surviving them is fine.
- In a low-acid jar (vegetables), there’s nothing stopping them. Sealed away from oxygen at room temperature, the spores germinate and produce botulinum toxin — odourless and tasteless.
- Pressure canning reaches about 116 °C, hot enough to destroy the spores directly. It is the only safe home method for low-acid food.

Where common vegetables sit
Every one of these is low-acid and needs pressure canning — never a water bath:

There’s no borderline case here the way tomatoes are borderline. These are squarely low-acid.

The one exception: pickled and acidified vegetables
Here’s the nuance that trips people up. You can water-bath can vegetables — if you first make them high-acid by pickling them in a tested vinegar recipe. The acid, not the heat, is what makes the jar safe.
- Dilly beans — green beans in a dill-and-vinegar brine
- Pickled beets
- Bread-and-butter pickles and dill pickles
- Pickled banana peppers
The rule for all of them: follow a tested Bernardin recipe and don’t reduce the vinegar. The measured amount of acid is what brings the whole jar below pH 4.6. Cut it to make the pickles “less sour” and you’ve quietly turned a safe jar into a low-acid one. This is the same reason you can’t water-bath spaghetti sauce or chili once you add low-acid onions, peppers, or meat.
Your two safe options for plain vegetables

Why you see water-bath vegetable recipes online
Plenty of blog and Pinterest recipes tell you to water-bath green beans or corn. They are unsafe by the Canadian guidance we can point at — Québec and HealthLink BC both publish that low-acid vegetables require pressure canning. Old cookbooks and family recipes from before the guidance was settled are the usual source. The fact that a jar didn’t cause illness doesn’t make the method safe; it means that particular jar happened not to grow toxin. Don’t gamble on it — pressure can, or freeze.
Bernardin puts it in one sentence, in the headnote to their Italian Style Tomato Sauce:
“Traditional Italian tomato sauce made with liberal quantities of olive oil and vegetables cannot be safely processed in a boiling water canner. A pressure canner is required to safely process low acid foods.”
Their sentence names oil and vegetables together, because that is the sauce they were describing. The general rule at the end of it is the one this page rests on.
Altitude adjustment
In a pressure canner the processing time never changes with altitude — the pressure does. Find your elevation, set your canner to the pressure Bernardin publishes for that band, and process for the time the recipe states.

Can you water-bath can green beans?
No — not plain. Green beans are a low-acid vegetable (pH above 4.6), and water-bath canning at 100 °C cannot destroy the Clostridium botulinum spores that can grow in a sealed low-acid jar. Plain green beans must be pressure canned, which reaches about 116 °C. The exception is dilly beans — green beans pickled in a tested vinegar brine — which are acidified below pH 4.6 and can be safely water-bath canned. Can you water-bath can corn?
No. Corn is one of the lowest-acid, densest vegetables you can can, and it's among the highest-risk for botulism when done wrong. Water-bath canning cannot make it safe. Plain corn must be pressure canned. For a no-pressure-canner option, cut it off the cob, blanch it, and freeze it — corn freezes exceptionally well.
My grandmother water-bathed her vegetables for years and nobody got sick. Why can't I?
Botulism is rare and random, not guaranteed — a jar can be unsafe and still not sicken anyone, because whether the spores were present, germinated, and produced toxin varies jar to jar. 'Nobody got sick' isn't evidence a method is safe; it's a survivorship bias. Botulinum toxin is odourless and tasteless, and as little as one contaminated jar can cause paralysis or death. What Québec and HealthLink BC publish today is that low-acid vegetables need a pressure canner, and Québec gives the reason: only a pressure canner reaches the 116 °C that destroys the spores. Use pressure canning or freezing.
What vegetables CAN I water-bath can?
Only vegetables that have been pickled or acidified with a tested recipe — enough vinegar or citric acid to bring the whole jar below pH 4.6. Common safe examples: dilly beans, pickled beets, bread-and-butter pickles, pickled banana peppers, and dill pickles. In every case the acid, not the heat, is what makes the jar safe, so you must follow a tested Bernardin recipe and not reduce the vinegar.
