How to Pressure Can Vegetable Soup in Canada (No Thickener)

The no-thickener rule (again)
Pressure-canned soup must be chunky-vegetable-in-broth, NOT thick-stew. The rules:
- No flour, cornstarch, arrowroot, or instant ClearJel. Thickeners prevent safe heat penetration.
- No pasta, rice, barley, or noodles packed in the jar. Same density issue.
- No dried beans packed in the jar unless pre-soaked and pre-cooked separately.
- No dairy (cream, milk, butter as a substantial component). Dairy curdles at canning temperatures.
- No starchy vegetables in pureed form (mashed potato, pumpkin puree, pureed squash). Density.
Allowed: vegetables in chunks, herbs, garlic, onion, broth (water, vegetable stock, or chicken/beef stock).
Thicken at serving time. Stir in cornstarch slurry, add cooked rice/barley/pasta, mash some of the cooked vegetables — all done when you reheat the jar, not before canning.

Vegetables (about 16-20 cups total chopped)

- 2 cups crushed or diced fresh tomatoes (or canned tomatoes)
- 1 cup turnip or rutabaga, cubed
- 1 cup parsnip, sliced
- 2 cups cabbage, chopped
- 1 cup leeks, sliced
Broth and seasoning
- 3-4 L vegetable broth (or chicken/beef — but then process 90/75 min as a meat soup)
- 1 tbsp pickling salt (or to taste)
- 2 bay leaves (split between jars)
- 1 tsp dried thyme
- 1 tsp dried oregano
- ½ tsp black pepper
- 2-4 garlic cloves, minced

Method
Step 1: Prep vegetables
- Wash, peel as needed, chop all vegetables to roughly 1-1.5 cm pieces. Uniform size matters.
- Keep vegetables separate in bowls — you’ll layer them as you pack jars (otherwise everything settles and you get jars that are 90% one vegetable).
Step 2: Heat the broth
- In a large pot, bring vegetable broth to a boil.
- Add bay leaves (split for jars), thyme, oregano, black pepper, garlic, salt.
- Keep at a low simmer.
Step 3: Brief blanch vegetables (optional but recommended)
- In a separate pot of boiling water, briefly blanch each vegetable type:
- Carrots, potato, turnip, parsnip: 3-5 minutes
- Green beans, peas, celery: 2-3 minutes
- Corn: 2-3 minutes
- Onion, cabbage: 1-2 minutes
- Tomatoes: skip blanching
- Drain.
This step removes some surface starches that would cloud the broth and partially pre-cooks vegetables for more even processing.
Step 4: Pack the jars
- Have the pressure canner with 7-8 cm of hot water and the rack inside, simmering gently.
- Have hot jars ready on the counter.
- Drop 1 bay leaf piece into each hot jar.
- Layer vegetables in each jar: fill jars 50% full with mixed vegetables (about 2 cups for 1 L jars). Don’t pack tighter than 50% — vegetables expand and water needs to flow.
- Pour hot seasoned broth over vegetables to cover, leaving 3 cm (1¼ inch) headspace. Critical — pressure canning needs more headspace than water-bath.
- Run the headspace tool down the inside of each jar to release air bubbles. Top up broth if needed.
- Wipe rims with a clean damp cloth.
- Apply fresh SNAP lids fingertip-tight.
Step 5: Process
- Lower jars into the canner. Water level at 7-8 cm — not covering jars.
- Lock the lid. Heat on high.
- Vent for 10 full minutes. Critical safety step.
- Apply the regulator. Bring to 10 PSI at sea level.
- Process at pressure:
- 1 L jars: 60 minutes at 10 PSI (vegetable-only)
- 500 mL jars: 50 minutes at 10 PSI (vegetable-only)
- If your broth contains meat OR you’ve added any meat: 90 minutes / 75 minutes (treat as meat soup)
- Maintain pressure throughout. If it drops, restart the timer when it returns.
Step 6: Cool and check
- Turn off heat. Don’t move the canner.
- Let depressurize naturally — 45-60 minutes. Never force-cool.
- Once at zero PSI, remove the weight, wait 10 minutes, unlock the lid.
- Lift jars with the jar lifter. Cool 12-24 hours undisturbed.
- Check seals. Wipe jars (siphoning is common with soup). Label, store.
If a jar doesn’t seal: the 24-hour rule applies — but low-acid foods have a much shorter refrigerator window.

Storage and serving
- Cool, dark, dry place at room temperature
- Best quality 12 months
- After opening: refrigerate, use within 3-4 days
- Inspect every jar before opening — bulging lid means discard immediately
To serve
- Open a jar. Pour contents into a saucepan.
- Heat to a simmer — about 8-10 minutes.
- Add at serving time:
- For thicker soup: 1 tbsp cornstarch slurry (1 tbsp cornstarch + 2 tbsp cold water)
- For minestrone style: ¼ cup cooked small pasta or barley
- For chicken vegetable: 1 cup shredded cooked chicken (or open a jar of pressure-canned chicken)
- For beef vegetable: 1 cup pressure-canned beef or sautéed ground beef
- For creamy soup: ¼ cup heavy cream or half-and-half stirred in off heat
- Fresh herbs (parsley, dill, chives) for brightness
- Taste, adjust salt and pepper.
- Serve with crusty bread, biscuits, or grilled cheese.

Variations
Garden harvest soup
Whatever’s coming out of the garden the week you make it — typical late-August Canadian version: tomatoes + zucchini + corn + green beans + carrots + onion + basil. Process as vegetable soup (60 min for 1 L).

Common problems
- Vegetables turned mushy. Over-processing or vegetables too ripe. Use firm vegetables; process for exactly the recipe time.
- Broth siphoned out of jars. Common with soup. As long as seals are intact and majority of liquid remains, safe.
- Cloudy broth. Normal for pressure-canned soup.
- Vegetables floated. Some vegetables are buoyant. Cosmetic only.
- Jar didn’t seal. The 24-hour rule.
- Bulging lid later. Discard immediately. Do not taste. Botulism warning sign.
- Tastes bland. Salt and seasoning is mild during canning to allow flexibility at serving. Add salt, pepper, herbs when reheating.
