Can You Water-Bath Can Beets? (No — Here's Why)
No, you cannot safely water-bath can plain beets. Beets are a low-acid food, sitting above pH 4.6, and a boiling-water bath only reaches 100 °C — not hot enough to destroy the Clostridium botulinum spores that can grow in a sealed low-acid jar and produce a lethal toxin. Processing them longer does not help, because boiling water never gets hotter. Plain beets must be pressure canned, which reaches about 116 °C. Why not: plain beets are low-acid
Beets are firmly a low-acid food — above the pH 4.6 line that separates high-acid (water-bath safe) from low-acid (pressure canning required).
A boiling-water bath only reaches 100 °C. That kills moulds, yeasts, and most bacteria — but not the heat-resistant spores of Clostridium botulinum, which thrive in a sealed, low-acid, oxygen-free jar and produce a lethal, tasteless, odourless toxin.
Destroying those spores takes about 116 °C, and the only home method that reaches it is a pressure canner. Boiling longer doesn’t help — water can’t get hotter than 100 °C, so extra time just softens the beets while the spores survive. 1. Pressure can them

2. Pickle them (water-bath safe)
Here’s the route that is safe in a boiling-water bath: a tested vinegar brine drops the whole jar below pH 4.6. The vinegar is doing the safety work — not the beets. 3. Blanch and freeze them
No canner at all. Blanch, cool, and freeze — see freezing and blanching.
You already water-bathed them — what now?
These jars cannot go on the shelf. Not for a month, not for a week — no matter how good the seals look.
And don’t taste them to decide. The toxin is odourless and tasteless, and there is no sample small enough to be a test.
Here is why the seals mislead you. A water-bathed jar of plain beets will very often seal perfectly, sit flat, and look exactly like a correctly processed jar. The seal tells you the air was driven out. It tells you nothing about whether the spores were destroyed — because a boiling-water bath cannot destroy them.
You have three options, and the clock matters:
- Refrigerate and use within 3–4 days — if the jars went into the fridge promptly, within a few hours of coming out of the canner. Treat them as unprocessed food: low-acid contents plus a room-temperature shelf is the textbook setup, so the fridge is the fix and the window is short. That 3–4 days is ours, not an authority’s. No source we could find publishes a window for an improperly processed jar treated as unprocessed food. HealthLink BC publishes one refrigeration figure — “Once the container has been opened, refrigerate leftovers, and use within one week” — and that is for an opened jar that was correctly processed, which is not what you have. We hold to the shorter window deliberately. Past it, Québec’s rule is the one to follow: “When in doubt, throw it out!”
- Freeze them. Open the jars, pack the beets into freezer containers, and freeze. This is the least wasteful option if you have space.
- Reprocess immediately in a pressure canner. Same 24-hour rule as a jar that didn’t seal: use fresh SNAP lids and follow a tested Bernardin time for plain beets at your altitude. Reprocessing guidance is written for jars that didn’t seal, not for jars processed by the wrong method. If in doubt, freeze.
If the jars sat at room temperature for more than a day, none of the three applies — the fridge option included. Why do bubbles appear at the top of the jar?
It depends entirely on when you see them, and the distinction matters. Bubbles rising while the jar is still in the canner or cooling on the counter are trapped air escaping as the contents expand — that is the venting a jar is supposed to do, and it is normal. Bubbles in a sealed jar that has been sitting on a shelf are a different matter: active bubbling, fizzing or a lid that has begun to bulge can be gas from microbial growth, and a low-acid jar is exactly where that gas can mean botulinum. Can I just add vinegar to plain beets to make them water-bath safe?
Not by improvising. The amount of acid needed to bring a jar reliably below pH 4.6 is what a tested recipe establishes through laboratory pH work — it depends on the ratio of vegetable to brine, the strength of the vinegar and the other ingredients. Splashing vinegar into a plain-beet jar gets you an untested product with no way to know whether it worked. Use a tested pickled-beet recipe as written, or pressure can them plain. Those are the two shelf-stable routes.
I've seen old recipes and relatives who water-bath canned plain beets — weren't they fine?
Some got lucky; botulism is rare per jar, but it's often fatal, and you cannot see, smell, or taste the toxin. Older cookbooks and family habits predate today's tested guidance, and 'we always did it and were fine' is survivorship, not safety.
