I Forgot the Lemon Juice in My Canned Tomatoes

If you water-bath canned tomatoes without adding the bottled lemon juice the recipe called for, do not store or eat them. The acid is not for flavour. Tomatoes sit close to pH 4.6, the line between food a boiling water bath can make safe and food that requires a pressure canner, and the added acid is what holds them below it. Without it, nothing in the jar prevents Clostridium botulinum from producing toxin. You have two safe options. If the jars are still within 24 hours of processing, open them, add the correct amount of bottled lemon juice, and reprocess with fresh SNAP lids for the recipe's full time. If more than 24 hours have passed, refrigerate them immediately and use within a few days, or freeze them. Never move an unacidified jar of tomatoes to the pantry.

Do not store or eat them. The bottled lemon juice in a tested tomato recipe is not for flavour and it is not optional — it is the entire reason a boiling water bath is safe for tomatoes at all.

You have two options, and which one applies depends only on the clock:

  1. Still within 24 hours of processing? Open the jars, add the correct amount of bottled lemon juice, fit fresh SNAP lids, and reprocess for the recipe’s full time.
  2. More than 24 hours? Refrigerate immediately and use within a few days, or freeze. Do not move them to the pantry.

Why the acid is the whole recipe

Tomatoes are the awkward case in home canning. Most fruit sits comfortably below pH 4.6 — the line between food that a boiling water bath can make safe and food that requires a pressure canner. Tomatoes sit close to that line rather than safely under it, and where exactly they land varies.

The Québec government’s home-canning guidance states the reason plainly: tomato pH “varies according to the variety, growing conditions and time of harvest”, so an acidifying ingredient such as lemon juice must be added to products made mainly of tomatoes for the boiling-water method to be safe. Not a preference. A requirement, from a provincial health authority.

That is what the bottled lemon juice does. It pushes the finished product below 4.6 and holds it there, so that even if Clostridium botulinum spores are present — and they are common in soil, so they arrive on the tomatoes — the acid prevents them germinating and producing toxin.

Leave it out and there is nothing else in the jar doing that job. A boiling water bath runs at 100 °C. Botulinum spores survive that indefinitely. The heat kills the moulds and yeasts that would spoil the food visibly; the acid is what handles the thing that would not be visible at all.

This has actually happened, in Ontario

It is worth knowing this is not a theoretical rule.

Public Health Ontario’s home-canning literature review records an outbreak in Ontario in 1999: three cases of foodborne botulism from home-canned tomatoes. The contributing risk factor is recorded as “inadequate pH of the final product.”

Three people, one province, one missing acidification step. Tomatoes are the food this failure keeps happening to, precisely because they are close enough to the line that skipping the acid feels harmless.

What we are not going to tell you

We cannot tell you whether your specific jars are safe. Nobody can, without laboratory pH testing of that batch. This page reports what the authorities say about unacidified tomatoes in general; it is not a diagnosis of what is in your pantry.

We are also not going to give you a way to check. There isn’t one:

  • Not smell. Botulinum toxin is odourless.
  • Not taste. It is tasteless, and tasting a suspect jar is the single most dangerous shortcut in home canning.
  • Not the seal. A sealed jar means a vacuum formed. It says nothing about pH.
  • Not appearance. A contaminated jar routinely looks completely normal.

If that feels unsatisfying, it is — and it is the honest position rather than a comfortable one.

Option 1: reprocess, within 24 hours

The 24-hour window is the same one that applies to any jar that didn’t seal.

  1. Open the jars.
  2. Add the amount of bottled lemon juice your recipe specifies, per jar. Bernardin’s tomato recipes call for 1 tbsp per 500 mL jar and 2 tbsp per 1 L jar — but take the figure from the recipe you actually used.
  3. Wipe the rims clean.
  4. Fit fresh SNAP lids. Lids are single-use regardless of what happened to the contents.
  5. Process again for the recipe’s full time, adjusted for your altitude.
  6. Cool 24 hours undisturbed, then confirm the seals.

Reprocessed tomatoes will be softer than a first run. That is a quality cost, and it is the trade for making the batch safe.

Option 2: refrigerate or freeze, past 24 hours

Past the window, reprocessing is off the table. Both remaining options are perfectly good:

  • Refrigerate and use within a few days, as you would any opened jar.
  • Freeze. Tomatoes freeze well, and freezing sidesteps the pH question entirely — C. botulinum cannot reproduce below 4 °C. Leave headspace for expansion.

Neither is a failure. A batch of tomatoes in the freezer is a batch of tomatoes.

If they have already been in the pantry a while

If you are reading this having found unacidified jars that have been stored at room temperature for weeks or months, do not open them to check. HealthLink BC’s disposal steps apply:

  1. Put the jar and its contents in a waterproof container.
  2. Put that container in the garbage.
  3. Do not feed it to pets or other animals.
  4. Wash your hands well with warm soapy water.
  5. Wash every utensil and surface the food, the container, or your hands may have touched.

Do not compost it. Do not boil it first — that means opening a jar you have been told not to open, and if it is bulging, opening is exactly when the toxin can aerosolise.

Next time

The rule is short: measure the acid into the jar before the tomatoes go in. Putting the lemon juice in the empty jar first makes it visible — you can see at a glance which jars are done, and you cannot lose count halfway through a hot, busy batch.

That is the whole preventive measure, and it costs nothing.

If you have already eaten from a jar you now doubt, and anyone develops double or blurred vision, drooping eyelids, slurred speech, difficulty swallowing or muscle weakness — call 911 or go to an emergency department immediately. Botulism antitoxin works best given early. Do not wait to see whether it passes.

Altitude adjustment

Process times in a boiling-water canner are written for altitudes up to 305 m. Above that, water boils below 100 °C and the time printed in the recipe is no longer enough. Find your elevation, then add the minutes Bernardin publishes for that band.

On the line between two bands, round up to the higher one. Slightly over-processing is safe; under-processing is not.

Bernardin’s published tables stop at 3,050 m. Higher than that, call Bernardin rather than extending the pattern yourself.

Frequently asked questions

Can I just add the lemon juice to the jars now?

Only if you are still within 24 hours of processing, and only by reprocessing. Open the jars, add the correct amount of bottled lemon juice per jar, wipe the rims, apply fresh SNAP lids, and process again for the recipe's full time. Pouring acid into a sealed jar and resealing it does not work: the acid will not distribute evenly through packed tomatoes, and you would be breaking a seal you then cannot properly restore. Past 24 hours, reprocessing is no longer an option and the jars go to the fridge or the freezer.

Does it matter that I used fresh lemon juice instead of bottled?

Yes, and this is the reason recipes specify bottled. The acidity of a fresh lemon varies with variety, ripeness and growing conditions, so you cannot know the pH you have actually reached. Bottled lemon juice is standardised, which is why tested recipes are written around it. If you acidified with fresh lemon juice, treat the batch the same way as an unacidified one.

My tomatoes taste fine and the jars all sealed. Is that not evidence they are safe?

No. A sealed jar tells you a vacuum formed, not that the contents are safe, and botulinum toxin is odourless, colourless and tasteless. A contaminated jar can look, smell and taste completely normal. This is the single most important fact about botulism and the reason no home test exists. Judge the jar by whether the recipe was followed, not by how it looks or tastes.

What if I only forgot it in some of the jars?

Treat every jar you cannot positively account for as unacidified. If you lost track partway through a batch, that is the whole batch. There is no way to tell an acidified jar from an unacidified one by looking at it, and the cost of guessing wrong is not a spoiled jar.

Can I pressure can them instead to fix it?

Not as a rescue for jars already processed. Reprocessing a second time degrades the tomatoes badly, and the pressure-canning time for tomatoes is a figure that has to come from a tested recipe for the pack style and jar size you actually used, not from a water-bath recipe you have already run. If you want shelf-stable tomatoes from this batch, the honest answer is to start again with a tested recipe followed exactly.
