Blueberry Jelly: What Bernardin Actually Publishes
Bernardin does not publish a pure blueberry jelly recipe. Their Berry Jelly recipe lists raspberries, blackberries, boysenberries, youngberries, dewberries and loganberries — blueberries are not among them. The one Bernardin jelly that contains blueberries is Bluebarb Raspberry Jelly, which combines 3 cups of wild blueberries with 2 cups of raspberries and 1 cup of chopped rhubarb, and that combination is not decorative: the raspberry and rhubarb bring acid that blueberries alone are low in. What Bernardin actually publishes
Their Berry Jelly recipe names the fruit it was tested with, and the list is specific:
raspberries, blackberries, boysenberries, youngberries, dewberries or loganberries
Blueberries are not on it.
The one Bernardin jelly that does contain blueberries is Bluebarb Raspberry Jelly — 3 cups wild blueberries, 2 cups raspberries, 1 cup chopped rhubarb. That is the tested route, and the recipe card above follows their quantities.
Why the exclusion is the interesting part
Everything on the Berry Jelly list is a cane berry, and cane berries are noticeably more acidic than blueberries.
A jelly recipe isn’t a suggestion — it’s validated for one particular balance of acidity, natural pectin and sugar. Substituting a lower-acid fruit changes the very thing that was tested.
Now look at what Bernardin does when blueberries are in the pot. Bluebarb adds raspberries and rhubarb, two of the most acidic things growing in a Canadian garden, to three cups of blueberries. Read that as a flavour combination if you like, but it is also doing a job.
Jelly and jam are not interchangeable here
This is why blueberry works better as a jam than a jelly:
- Jelly uses strained juice only. Clear, firm, no solids. All the pectin and acid have to be in the juice.
- Jam keeps the crushed fruit. Opaque, softer set, and the skins come along.
Blueberry skins carry a meaningful share of the fruit’s pectin. Strain them out and you have taken away part of what makes it set. Keep them in — which is what jam does — and blueberry behaves well, which is why Bernardin publishes several tested blueberry jams and no blueberry jelly.
If pure blueberry is what you actually want, make blueberry jam.
Don’t improvise the substitution
The obvious temptation is to pour blueberry juice into the Berry Jelly recipe and carry on. We would not tell you to do that, and Bernardin doesn’t either.
Swapping the fruit changes acidity and natural pectin at the same time, which affects the set and narrows the margin the recipe was tested against. A soft set is a disappointment; the acidity question is not merely a disappointment.

- Bluebarb Raspberry Jelly — if you want blueberries in a jelly.
- Blueberry jam — if you want pure blueberry.
Process time and altitude
Bernardin processes both Berry Jelly and Bluebarb Raspberry Jelly for 10 minutes at altitudes up to 1000 ft (305 m), with 6 mm (¼ inch) headspace in 250 mL jars.
Above 305 m you must add time. Canada makes this matter more than most places — Calgary sits at 1,084 m on Bernardin’s own elevation chart, so a Calgary kitchen is never on the base row of the table. A note on the honey
Bluebarb uses 1½ cups honey alongside 2 cups sugar. That is unusual in a tested jelly and it is part of the recipe as published — not something to adjust by eye. Sugar in a jelly is not only sweetness; it is doing structural work in the set.
Altitude adjustment
Process times in a boiling-water canner are written for altitudes up to 305 m. Above that, water boils below 100 °C and the time printed in the recipe is no longer enough. Find your elevation, then add the minutes Bernardin publishes for that band.

On the line between two bands, round up to the higher one. Slightly over-processing is safe; under-processing is not.
