Crispy Zucchini Fritters (Use Up a Summer Glut)
Ingredients
- 500 g zucchini (about 2 medium), grated
- 1 tsp salt
- 1 large egg
- 60 g (Β½ cup) all-purpose flour
- 2 green onions, thinly sliced
- 1 garlic clove, minced
- ΒΌ cup chopped fresh dill or parsley
- Black pepper, to taste
- Neutral oil, for frying
- Sour cream or tzatziki, to serve
Instructions
- Grate the zucchini on the coarse side of a box grater. Toss with the salt in a colander and let sit 10 minutes.
- Wring the zucchini hard in a clean tea towel to squeeze out as much liquid as possible β this is the crucial step.
- In a bowl, mix the dry zucchini with the egg, flour, green onion, garlic, herbs, and pepper until it just holds together.
- Heat a thin layer of oil in a skillet over medium-high. Drop in heaped tablespoons and flatten gently.
- Fry 3 minutes per side until deep golden and crisp. Don't crowd the pan; work in batches.
- Drain on paper towel and serve hot with sour cream or tzatziki.
