Habitant Yellow Split Pea Soup
Ingredients
- 2 cups dried yellow split peas, rinsed
- 1 ham bone or ham hock (or 2 cups diced ham)
- 1 onion, chopped; 2 carrots, diced; 2 stalks celery, diced
- 1 bay leaf, ½ tsp savory or thyme
- 8 cups water
- Salt and pepper, to taste (add at the end)
Instructions
- Combine the peas, ham bone, onion, carrot, celery, herbs, and water in a large pot.
- Bring to a boil, then reduce to a gentle simmer. Skim any foam.
- Simmer, partly covered, about 90 minutes, stirring now and then, until the peas break down and the soup is thick.
- Lift out the ham bone; shred any meat and return it to the pot. Discard the bay leaf.
- Season with salt and pepper. Thin with water if needed. Serve hot with crusty bread.
