Fresh Peach Cobbler
Ingredients
- 6 ripe peaches, sliced (about 6 cups)
- ⅓ cup sugar, 1 tbsp cornstarch, squeeze of lemon
- Topping: 1 cup flour, ¼ cup sugar, 1½ tsp baking powder, pinch salt
- ¼ cup (60 g) butter, melted; ½ cup milk
- Cinnamon or nutmeg, to taste
Instructions
- Toss the peaches with the sugar, cornstarch, and lemon. Spread in a buttered baking dish.
- Whisk the flour, sugar, baking powder, salt, and spice; stir in the melted butter and milk to a soft batter.
- Drop spoonfuls of the batter over the peaches, leaving gaps for the fruit to bubble through.
- Bake at 190 °C for about 40 minutes until the topping is golden and cooked through and the fruit bubbles.
- Cool slightly; serve warm with ice cream or cream.
