Mussels in White Wine (Moules Marinière)

  1. Scrub the mussels and pull off the beards. Discard any that are cracked or stay open when tapped.
  2. In a large pot, soften the shallots and garlic in half the butter over medium heat without browning.
  3. Pour in the white wine and bring to a strong simmer.
  4. Add the mussels, cover, and steam over high heat, shaking the pot once, just until the shells open — about 4 to 5 minutes.
  5. Discard any mussels that stayed shut. Stir in the remaining butter, the parsley, and a splash of cream if using.
  6. Serve straight from the pot in bowls with plenty of the broth and crusty bread.
