French Onion Soup
Ingredients
- 1 kg onions (about 6), thinly sliced
- 3 tbsp butter + 1 tbsp oil
- 1 tsp sugar, pinch of salt
- ½ cup dry white wine (or a splash of sherry)
- 1.2 L good beef stock
- 1 tbsp flour, 1 tsp thyme, 1 bay leaf
- Baguette slices, toasted
- 1½ cups grated Gruyère
Instructions
- Melt the butter and oil in a heavy pot. Add the onions, sugar, and salt.
- Cook over medium-low, stirring regularly, 45–60 minutes until deep golden brown and jammy. Don't rush.
- Stir in the flour, cook 1 minute, then deglaze with the wine, scraping the pot.
- Add the stock, thyme, and bay. Simmer 20 minutes; season.
- Ladle into oven-safe bowls; top each with toasted baguette and plenty of Gruyère.
- Broil until the cheese is bubbling and golden. Serve at once (careful — hot).
