Classic Apple Pie
Ingredients
- Pastry for a double-crust 23 cm pie (homemade or all-butter store-bought)
- 7–8 firm tart apples, peeled and sliced
- ¾ cup sugar
- 2 tbsp flour or 1 tbsp cornstarch
- 1½ tsp cinnamon, ¼ tsp nutmeg
- 1 tbsp lemon juice, pinch of salt
- 1 egg, beaten (egg wash); 1 tbsp coarse sugar
Instructions
- Toss the apples with sugar, flour/cornstarch, spices, lemon, and salt. Let sit 20 minutes.
- Heat oven to 220 °C with a baking tray on the bottom rack. Line a pie plate with the bottom pastry.
- Fill with the apples (mounded). Lay the top crust over, trim, seal, and crimp. Cut vents.
- Brush with egg wash and sprinkle with coarse sugar.
- Bake on the hot tray at 220 °C for 20 minutes, then reduce to 190 °C and bake 35–40 minutes until deep golden and bubbling.
- Cool completely (at least 3 hours) before slicing so the filling sets.
