Old-Fashioned Blackberry Cobbler
Ingredients
- Filling: 5 cups blackberries
- ½ cup sugar
- 1½ tbsp cornstarch
- 1 tbsp lemon juice
- Topping: 1 cup flour
- 3 tbsp sugar, plus more for sprinkling
- 1½ tsp baking powder + pinch salt
- ¼ cup cold butter, cubed
- ½ cup milk
Instructions
- Heat oven to 190 °C. Toss the blackberries with sugar, cornstarch, and lemon; spread in a baking dish.
- Whisk flour, sugar, baking powder, and salt. Cut in the cold butter until crumbly.
- Stir in the milk just until a soft, shaggy dough forms — don't overmix.
- Drop spoonfuls of dough over the fruit, leaving gaps. Sprinkle with sugar.
- Bake 40 minutes until the fruit bubbles and the topping is golden and cooked through. Rest 15 minutes; serve warm.
